Pesto di pistacchio genovese on spring wheat soba noodles

Makes approximately 2/3 cup pesto

1/2 - 1 cup loosely packed fresh basil 
4 cups spinach 
3 tablespoons olive oil 
3 tablespoons nayonaise (or mayonnaise)  
3 tablespoons shelled pistachios
1/4 cup pine nuts
1 tablespoon nutritional yeast (if desired for B vitamins)
2 cloves garlic
1/2 tsp sea salt
1/2 pound soba noodles (buckwheat or spring wheat)
Freshly ground sea salt and black pepper

Combine all ingredients except noodles in a high-speed blender until smooth. Boil soba noodles approximately 5 minutes, or until soft. Drain. In a large serving bowl, combine noodles and sauce until coated.

Sprouted raw protein drink with cinnamon and maca

Serves one

3 tablespoons vanilla raw protein (a blend of rice protein and 17 sprouts)
2 T sunwarrior raw vanilla brown rice protein
8 oz unsweetened almond milk 
8 oz filtered water
5 ice cubes
1 tsp cacao powder
1 tsp maca powder
1/4 tsp cinnamon
pinch nutmeg
(glutamine, used in weight training if you wish)

Blend in blender until smooth and frothy.

Minted split pea bisque




Minted split pea bisque

Serves four

12 ounces frozen peas
7 cups spinach, divided
4 celery stalks (approximately 1 cup)
1 bunch mint (approximately 1/2 cup loosely packed)
1 large onion or 6 shallots
3 cloves garlic
4 pitted dates
2 teaspoons liquid aminos or 2 tablespoons of any no salt seasoning 
2 cups vegetable or chicken broth 
1 lemon, freshly squeezed (about 4 teaspoons)
4 cups water
2/3 cup cashews (to blend)

Simmer all ingredients (including only 4 cups spinach) except cashews for 8-10 minutes, then blend in a high-powered blender with cashews. Add the remaining spinach (3 cups) and let it wilt. Garnish with fresh mint if desired.

Refreshing papaya, orange, & carrot juice


For that moment when you really would rather be walking through a farmers market on a gorgeous island...but have 6 loads of laundry whining at you instead. Let this be your escape. 

Refreshing papaya, orange, & carrot juice

1 medium papaya, skin removed
4 oranges, peeled
5 organic carrots

Run all ingredients through juicer, alternating between the papaya and carrots, then juice the oranges (alternating carrots and papaya prevents clogging the juicer).




Cleansing watercress smoothie



Cleansing watercress smoothie

8 leaves lacinato kale (about 3 cups)
1/2 bunch watercress (about 1cup) 
1 1/2 cups frozen mango (about 2 fresh)
1/4 cup naked juice 
1 cup hemp milk (or whatever milk you desire)
2 cups filtered water

Blend all ingredients until smooth.
